Dersch Satellite Serving Area

On Tulegatan in Stockholm you will find Dersch, the restaurant that has made schnitzel its speciality. The idea was born after a trip through Europe where the team tasted schnitzels in search of the best meat, the best breading and the best accompaniments. The result was Dersch, with the ambition to let guests decide for themselves which schnitzel deserves the title of the world's best.

When the restaurant and bar inside Dersch were fully booked, there was a need to create more space for guests, without further burdening the restaurant. The mission was therefore to expand the outdoor dining area with a satellite serving area that could serve as a complement to the existing serving area by the facade.

The idea became a smaller, independent bar where guests can meet and have a drink both before and after their dinner reservation, while the indoor restaurant can continue to focus on its seated guests. In this way, the satellite serving area became not only an additional serving space, but also its own small meeting place for Dersch's visitors.

A satellite serving area is an independent serving space located a short distance from the restaurant's facade. It can be a solution when there is not enough space directly outside the restaurant, or when the business simply wants to create more seating. Satellite serving areas are particularly common in squares, streets and so-called summer streets where traffic and parking may be restricted during parts of the year to provide more space for restaurants and city life.

If you want to read more about satellite serving areas, we have written a separate post about how they work and what you need to consider. Read more here.

The approved area for Dersch's satellite serving area was only 2.3 x 5 metres. A small area can be a challenge, but also one of the most enjoyable aspects of this type of project. Here, it is important to think smartly and utilise every square metre without the serving area feeling cramped.
The goal was to create a complete and cosy outdoor dining area with space for guests, weather protection, lighting, infrared heating and greenery, while also providing enough space to move around comfortably.

As a base, our installers installed decking that clearly defines the serving area and creates a slight elevation from the surrounding street environment. The decking also contributes to a warmer and cosier feel and gives the serving area a clearer identity.

Around the serving area, Svalson's height-adjustable fence, Café au Lä, was installed. This modern windbreak combines function and design, allowing the height to be adjusted according to weather and needs. The glass is balanced by a counterweight, making it easy for guests to adjust the windbreak themselves. This way, the serving area can be opened up when the weather is fine and quickly protected when the wind picks up.

Above the serving area, a pink parasol of the Schatello model presides. The colour gives the entire satellite serving area a strong and playful character and makes it easy to spot from the street. Schatello is developed for restaurants and other commercial environments where quality, durability and high functionality are important. The parasol has a robust construction and high wind resistance, making it well suited for this type of outdoor environment.

To create a cosy atmosphere even during the evening, the parasol was supplemented with LED RGB strips. Together with infrared heaters from Solamagic ECO+ PRO, guests can enjoy the serving area even when the temperature drops and the sun has set.

On the short sides, two flower boxes were placed, further enhancing the feeling of a private little restaurant environment amidst the urban landscape. Greenery is a simple but effective way to create more life and character in an outdoor dining area. Flower boxes can serve as natural dividers, soften harsh urban environments and at the same time make the serving area cosier and more welcoming.

Here, they provide a nice contrast to the pink and grey details and help to frame the serving area in a natural way.

In this project, we have been involved throughout the entire process and responsible for sketches, building permit documentation, planning, production and installation.

It is precisely the comprehensive approach that is one of our greatest strengths. By consolidating all parts with a single partner, the project becomes both simpler and more secure for the customer. Our experienced project managers oversee the process from the initial ideas to the final installation and ensure that all details work together.

The result is a small but complete satellite serving area where every square metre has a function and where materials, colours and details interact.

We are very pleased with the result at Dersch and believe that the project demonstrates how much can actually be created even on a limited space when planned correctly.

A big thank you to Dersch for your trust and for a truly enjoyable project!

If you happen to be in the Tulegatan area, be sure to stop by Dersch and try a really good schnitzel.
